Choux pastry is a delicate dough that can be used in many delights, cream puffs being of the most familiar ones. Their batter contains only butter, water, flour, and eggs, stuffed with a mouthful of cream inside them.
The recipe sounds simple enough, and the pastries come out as fluffy, golden brown puffs sprinkled with icing sugar on top. Golden Bites, an online durian dessert brand decided to take this humble puff a step further.
For durian season, it launched a Premium Organic Musang King Puff. The choux is black due to bamboo charcoal and sprinkled with gold flakes instead of powdered sugar. Stuffed with Musang King durian filling, they?re sold at RM12 each.
Black and gold, a classic colour combo
Shawne, co-founder of Golden Bites told Vulcan Post that the inception of their premium durian puffs actually came about accidentally.
Golden Bites? pastry chef with 11 years of experience, Kelvin, had actually attempted creating a regular choux topped with a black layer of craquelin. In the french pastry world, craquelin is a cookie topping added to choux for a further sweet and crunchy texture.
The experiment failed as it didn?t turn out as appealing as the team hoped. They wondered, ?Why not make the whole [choux] black and sprinkle gold dust on top, black and gold never go wrong anyway!?
Costing RM12 per puff, it implies that the business is looking to target a more premium market of people who find pleasure in the simplest desserts. The black and gold aesthetic also gives off a luxurious and expensive feel, which can work well in the gifting sector too.
Shawne was able to verify this, sharing that the primary target market for these puffs is durian enthusiasts willing to pay a premium price for the pastry. ?We try to reach them by word of mouth, or also to those who love Insta-worthy products that are edible and of course, delicious,? she added.
Since the launch of the Premium Organic Musang King Puffs on August 1 this year, Shawne reported that they?ve sold over 100 6-piece boxes of it to date, bringing in approximately RM6,000 in revenue from that alone (following a buy 5, free 1 promo pricing).
Cream puffs aren?t even their main product
Of course, other than the black and gold durian pastry sold by the brand, they also have the more traditional golden-brown durian cream puffs as an option. You could say the brand name Golden Bites sums up what it has to offer.

Kelvin spent a decade of his career as a Chief Baker in his Subang Jaya bakery, where its best-seller was the American Cheesecake. He decided to try incorporating durians into the cheesecakes and was surprised by his results, from its taste to texture.
Sharing the creation with close kin, he received enough positive feedback to pivot and solely focus on the durian niche instead. The pandemic?s strain on the bakery?s finances further validated his decision to close the shop and launch Golden Bites in October 2020.
?Our durian puffs became a crowd favourite maybe because of how light they are. Cheesecakes are denser, and usually chosen for festive seasons or birthdays, but puffs can be eaten at any time of the day,? Shawne explained to Vulcan Post.
Taking on a more premium branding
It?s worth noting that Golden Bites does face a couple of competitors in the durian cream puffs scene, namely Taste Better from Melaka, and the international Japanese chain, Beard Papa, not to mention smaller Instagram bakers who make them too.
Looking at the size of Golden Bites? puffs, it would be most comparable to Beard Papa. This is because the Melakan brand?s choux are significantly smaller, meant to be eaten in a single bite, and therefore cheaper at RM2.30 per piece.
For a single D24 and Musang King durian puff, Golden Bites charges RM6.90 and RM9 respectively. Beard Papa?s durian cream puff costs RM7.90, based on its Zomato listing.
Shawne claims that Golden Bites? puffs stand out as Kelvin has found a technique of his own to retain the texture of an actual durian in dessert form for consumers. The Japanese brand appears to blend durian paste into a cream form for a smoother texture, while Kelvin?s method differs.
Looking closely at Golden Bites? puffs, you can certainly still see substantial durian pulp throughout the cream.

Golden Bites also sources D24 and Musang King durian pastes from a partner farm which Shawne disclaimed was a high cost on its own already. To add, the reason Musang King durians are so expensive is because they?re highly sought after despite the limited supply.
For the team to control costs, all products are made in batches on a pre-order basis, as baking the desserts in bulk to sell as on-demand orders may lead to more wastage if sales are low on any particular day.

Thus far, Golden Bites has sold over 8,000 D24 puffs since December 2020 and 3,000 Musang King puffs since June 2021. It?s not too surprising, as the demand from durian lovers never really ceases all year round.
Currently operating as an online brand from a central kitchen in Kelana Jaya, Shawne has shared her interest for Golden Bites to appear in food or pop-up events once it?s safe again.
She also shared that the Premium Organic Musang King Puffs will remain on the shop?s menu as long as the season permits for the organic fruits. Otherwise, the other desserts like burnt cheesecakes, regular choux puffs, and other seasonal items will continue to be sold.

Bad times for fans of affordable sports compacts. A decade ago, you only had to spend 35,000 euros to have a blast driving a Renault Megane RS or a Seat Leon Cupra. Mourned by purists, the lack of a manual gearbox makes it all the more versatile with its gentle dual-clutch automatic transmission. And despite its generous engine devoid of any form of hybridization, it is limited to less than 9 liters per 100 kilometers at a leisurely pace. Not enough to make it a real financial sinkhole.

When I was in college, my roommate, Kristi, convinced me to go to the gym with her. I remember feeling intimidated. I was slight, pale and Goth-leaning with oxblood lipstick and zero muscle tone. I was certain everyone could tell I was an imposter in borrowed Lycra.
I reluctantly climbed on the bike next to hers and started pedaling. The gym smelled like sulfur and boiled ham but apart from that, it wasn?t too bad. In fact, it was almost kind of fun. I thought the point was to go as fast as you could so I pedaled like a beast on blurred cartoon legs.
Kristi warned me to pace myself but I felt fine. I remember thinking: This is my first time at a gym and I am on fire! I am going twice Kristi?s speed and she goes to the gym every day! Might we even be talking? Olympics material? After forty-five solid gold minutes, I slid off the bike in triumph.
But as I strolled over to the water fountain, a curious thing happened: I noticed that my legs had turned into rubber bands. All gym sounds suddenly muffled and before I knew it, I slithered down between two bikes and passed out cold. I was driven back to my dorm in an ambulance. In front of my crush.
And that was it for me.
For years, I thought Health belonged to the Health Nuts: the SoulCyclers, the Vegans, the Celery Juice Drinkers, the Run-Every-Day-No-Matter-What-ers. Health was owned by people like my friend, Jamie, who did a yoga headstand while in labor with her second child.
Good for her, I thought, and yahoo for all those other people, but I did not inherit that gene. I fell more into the camp of Those Who Dream About Their Next Meal. And Those Who Love Rainy Days because pressure?s off to go outside and do something fun? you can read all day and not feel guilty!
But somehow as I grew older and maybe a little wiser, after I had my children and my joints got creakier and words like colonoscopy slid into my vernacular, my lens on health began to shift. Health did not have to mean Athletic. It did not mean Perfect Body Mass Index. Or that I had to eat seeds or even stand on my head.
Health was so much bigger than that. It was mindful. It was about being curious and observant in the moment, noticing the world around you. On an evening walk, for example, you might discover the way the last burst of sunlight illuminates the leaves on the trees, shimmying like gold spangles on a costume. Or appreciating how good it feels to peel off a sweat-soaked bra and step into a hot shower after strenuous, albeit shaky, yoga. It?s giving yourself permission to close your eyes for 20 minutes on a day you really need it, no matter how busy you are. It?s daring yourself to leap with exuberance into a cold ocean. It?s observing your capacity to fill your lungs with air, grasping the gift of being alive.
It took me a long time to realize that these things belonged to me, too, and not just the preternaturally fit.
It?s safe to say I am never going to race the Tour de France, and in fact may never hop on anything that even resembles a bicycle, but I?ve discovered I?m pretty great on my own two legs. These days, I walk a lot, giving myself little goals and rewards. For example, I?ll walk three miles to the farmers market for a bag of fuzzy peaches. I?ll walk my dog neighborhoods away to do errands for which I would have previously taken a train. Last weekend, I wandered over to a touristy street dotted with boutiques stocked with the kind of glittery gowns one might wear to the Oscars. Walking into one, I surprised myself by grabbing an armful of dresses, each more outlandish than the next. The old me might have picked my flaws apart while standing in front of the giant mirror. But current me had a blast, giggling to myself in my sneakers and sturdy, albeit unshaven, legs.
I?ve come to realize that being healthier is happier and well within my control.

If you?re thinking you have to choose between going vintage or modern while designing your home, think again. Brian and Anissa Zajac have mastered the rustic meets streamlined look in their stunning remodel, proving that with a little patience and lots of attention to detail, you can have the best of both worlds with a modern cottage house.
Located in a dreamy historic neighborhood in Indianapolis, Indiana, the couple bought their old Cape Cod cottage as a fixer-upper just over three years ago, and have transformed the home into a beachy, modern oasis they share with their three daughters. What most deemed as a remodel project too large to take on, Brian and Anissa, who started House Seven Design + Build, saw it as an opportunity to challenge their skills and test out some daring design choices.
?All the rooms on the first floor were cut up due to years of bad remodeling and it just didn?t flow. I wanted the house to serve us and how we live together so we opened it up as much as possible,? Anissa says.

Tell us about your home.
Our home is a Cape Cod-style cottage located in Indianapolis, Indiana. When we purchased the house we intended on remodeling quite a bit of it. But now we have actually remodeled almost every square inch in one way or another over the past three years.

I love our kitchen because it?s where we spend the majority of our time as a family.

Your house is the epitome of beachy vibes meets cozy cottage charm. What was your design inspiration?
I wanted the house to feel true to its cottage style. My goal was to keep the house feeling calm with neutral and organic elements, along with lots of texture for warmth.

How did Indiana playinto your design inspiration?
It?s funny because most people that see our house online think that it?s on the West Coast. I gravitate towards neutrals because the sky gets very overcast in Indiana in the winter months, and I want to keep the house as light and bright as possible.

Always a wood-burning fire going in the living room, soup on the stove, the scent of candles burning throughout, and jazz music playing in the background.

What was your biggest design challenge for the space?
The rooms are small so I had to work hard to choose furniture that would be comfortable and beautiful. I will say there were a couple of rooms that I didn?t get exactly right at first but now I think are perfect.

What?s your number one interior design tip?
Have a plan and stick to it. It?s so important to know how you want to use the space before purchasing items. I think living in your home for a while before tackling the overall design is so much better than doing everything before you move in.
It gives you time to get to know the home and how it functions for you. Once that is established you can make a design plan as to what you need to make the space feel complete. (Whether that?s new furnishings, paint colors, trim work, etc.)

I?m always on Pinterest looking for inspiration but I also love design books and my favorite blogs that I look at weekly. I also love to travel. No matter where we are, Brian and I are always looking at the architecture and the way things were designed and fabricated. I love knowing the process of how things are made or trying to figure it out, which I think makes me a better designer.

Antiques are my favorite?especially ones from France. The craftsmanship of French-made furniture always inspires me. We know how difficult it is to escape the relentlessness of the news cycle right now, but in our honest opinion, a gentle film with good vibes always does the trick. So many aspects of our lives can feel crushing and with little reprieve, but taking some time to enjoy a sweet, silly movie can make all the difference in the world. And while the term ?feel-good? is absolutely subjective, there is definitely a subset of movies that solidly fall under this category for most people.
Taking into account that not everyone is a weirdo who thinks Phantom Thread is a feel-good movie such as myself, I?ve gone ahead and compiled a list of true classics.
