Le saké est un alcool que l?on ne peut dissocier du Japon, tant il fait partie de la culture millénaire de ce pays. Mais il trouve de plus en plus d?amateurs hors de ses frontières, en France notamment. Obtenu par fermentation, il contient essentiellement du riz, de l?eau, mais aussi des ferments et des levures. Son goût velouté, aux accents floraux très séduisants et non sucrés, peut être trompeur et faire oublier l?ivresse. Cet alcool de riz à la robe cristalline offre des possibilités inépuisables et ouvre donc nombre de questions, auxquelles nous proposons de répondre.
Pourquoi dit-on que le saké est un vin de riz ?
La confusion a perduré de nombreuses années : non, le saké n?est pas cet alcool distillé à base de sorgho que l?on sert en fin de repas dans certaines cantines chinoises bon marché. Et c?est justement pour réparer ce malentendu que l?expression « vin de riz » s?est imposée auprès des ambassadeurs du saké en France ? sommeliers, distributeurs, cavistes, etc. De quoi parle-t-on alors ? D?une boisson ancestrale japonaise à la robe limpide, obtenue après une lente fermentation. Les Japonais la nomment nihonshu, « saké » étant le terme générique pour désigner un verre d?alcool.
A bien des égards, elle se rapproche du vin : un degré d?alcool modéré (entre 14 0 et 17 0 en moyenne), une large possibilité d?accords et une dimension historico-culturelle forte. Mais la comparaison s?arrête là, car le saké japonais s?éloigne de son cousin en termes d?arômes, de structure, de texture? et de prix aussi : il est difficile de trouver en France une bonne bouteille de saké japonais en deçà de 30 euros ? car l?importer coûte cher.
Comment le fabrique-t-on ?
Même si trois ingrédients suffisent ? riz, eau et kôji, un ferment?, l?affaire est assez complexe. A l?instar des cépages dans le vin, il existe au Japon une multitude de variétés de riz à saké, plus long et plus charnu que le riz de table. Les grains sont plus ou moins polis, c?est-à-dire qu?on leur retire leur péricarde. Après lavage, le riz est trempé, égoutté, puis cuit à l?étuvée dans de grands cuiseurs à plus de 100 degrés, et refroidi aussitôt. Une partie du riz cuit est ensemencée par le kôji (des spores de champignon permettant la transformation de l?amidon en sucre), pendant trois jours, dans une pièce spéciale (kôji-muro). L?autre partie est mise de côté pour alimenter les cuves ultérieurement.
Un pied de cuve (shubo) est réalisé à partir du riz ensemencé (kôji-mai), du riz cuit (kakemai), d?une eau de source la plus pure possible (les Japonais distinguent les eaux douces et dures, selon leur concentration en minéraux) et de levures. Une douzaine de jours sont nécessaires à sa maturation, plus si l?on n?ajoute ni levures ni ferments lactiques. Il est ensuite transposé en cuve avec ajout graduel de matière supplémentaire (eau, riz, kôji) et bâtonnage pour homogénéiser la fermentation, laquelle se prolonge trois à huit semaines. Viennent enfin le pressurage, la filtration, la pasteurisation (ou non) et, parfois, un vieillissement en cuve de quelques mois avant la mise en bouteille.
Comment s?y retrouver parmi toutes les catégories ?
On peut se sentir fort dépourvu face à l?étiquette, surtout si les informations ne sont pas traduites sur une contre-étiquette, ce qui est fréquent. Sont généralement mentionnés la marque, le nom de la brasserie et sa région, la variété de riz utilisée, mais aussi le style : nigori (trouble), kôshu (vieilli), muroka (non filtré), nama (non pasteurisé), genshu (non réduit) ou encore yamahai et kimoto (levures naturelles uniquement). Mais les deux éléments essentiels, qui vont avoir une influence forte sur le goût, sont autres : le taux de polissage résiduel du riz (seimaibuai), exprimé en pourcentage de matière restante,et l?ajout ou non d?alcool.
On trouve ainsi le honjôzô (à partir de 70 % de riz restant), le ginjô (à partir de 60 %) et le daiginjô (à partir de 50 %). Ces trois-là autorisent l?ajout d?alcool distillé avant la filtration. Lorsque ce n?est pas le cas, on parle de junmai. L?appellation s?emploie aussi tel un préfixe pour distinguer les junmai ginjô (saké sans ajout d?alcool avec un taux de polissage à partir de 60 %) et junmai daiginjô (à partir de 50 %).
Ce junmai daiginjô est considéré comme le nec plus ultra des sakés tels qu?on les conçoit depuis les années 1990. Avec cette idée que plus le riz est poli, meilleur est le saké. Mais cette approche ne semble plus faire l?unanimité, un faible polissage pouvant donner d?excellents breuvages. « Certaines maisons commencent à s?affranchir de ces appellations afin de faire exister leur identité de manière autonome plutôt qu?au travers d?une classification née des concours et des bureaux de taxes », constatent les importateurs Adrienne Saulnier-Blache et Barnabé Nuytten, de la société Madame Saké. C?est le cas notamment de la maison Takeno, qui ne mentionne pas le taux de polissage sur ses bouteilles.
Bref, les débats d?experts étant aussi copieux que dans le vin, le mieux est de goûter.
Faut-il le boire chaud, froid, à température ambiante ?
Une des grandes particularités du saké est qu?il peut être bu à des températures très différentes, note Adrienne Saulnier-Blache. L?intérêt ? Elargir la palette aromatique à partir de la même bouteille. « De manière assez empirique, on peut dire que le saké chaud est destiné à accompagner les mets d?hiver, le saké froid ceux d?été », précise la spécialiste. Quand il n?est pas consommé frais (de 5 0C à 10 0C), tel un vin blanc, le saké peut s?apprécier à température ambiante (20 0C) tel un rouge, ou tiède à chaud (de 30 0C jusqu?à 55 0C). Pour le faire chauffer, il ne faut pas utiliser de micro-ondes : c?est dans une casserole au bain-marie que cela se passe, en ayant pris soin de transvaser le nectar dans une petite carafe en porcelaine (tokkuri).
Mais attention, tous les sakés ne se réchauffent pas. Ce traitement est surtout possible pour les « sakés traditionnels », les junmai et honjôzô, qui affichent un profil céréale, lactique ou fermentaire. A distinguer des « sakés modernes », aux notes florales et fruitées, que l?on conserve au réfrigérateur avant de les consommer. Cette distinction entre le « chaud » et le « froid » rejoint donc celle entre « sakés traditionnels » et « sakés modernes » que les cavistes privilégient dans leur classement, visant à coller au profil aromatique recherché par le tôji (maître brasseur).
Dans quel verre le boit-on ?
Depuis l?apparition des sakés modernes, à boire froids, dans les années 1990, les verres à vin type bordeaux ou bourgogne (à base large) sont particulièrement appréciés, y compris au Japon. Ils permettent d?appréhender au mieux la robe, le nez et la complexité aromatique de ces nectars au profil floral ou fruité. Les grands noms de la verrerie à vin ont désormais leur propre modèle adapté, à l?image du Synergie saké en tulipe, de la marque Lehmann.
En revanche, les sakés chauds se dégustent dans de petits récipients traditionnels en céramique, porcelaine, bois ou métal. On distingue notamment les o-choko, petites coupes de 2 à 4 centimètres au buvant droit, des sakazukis, plus larges et évasés. Les premiers sont plutôt adaptés aux sakés ayant un profil céréale, les seconds à ceux qui privilégient la minéralité. Sans être idéaux, de petits verres à alcool fort feront aussi l?affaire?
Peut-on accorder le saké avec autre chose que des poissons crus ?
La cuisine japonaise, notamment les sushis et sashimis, est certes idéale pour apprécier au mieux les arômes du saké. On pense aussi aux fruits de mer, notamment aux huîtres. Mais de nombreux sakés se marient très bien aux poissons cuits, fumés, ainsi qu?aux assiettes végétales ou aux champignons.
Selon le style de saké et la température de service, on peut aussi imaginer des alliances avec des viandes blanches, rôties ou en sauce, de la charcuterie, des fromages à pâte persillée ou pressée cuite, ainsi que des desserts. De manière générale, les possibilités d?accords sont plus nombreuses qu?avec le vin. Là où ce dernier échoue à s?accorder convenablement, le saké excelle. Le meilleur exemple étant l??uf, dont il est le compagnon idéal.
Est-ce que le saké se bonifie avec l?âge, comme le bon vin ?
Certains sakés peuvent gagner en qualité, les années passant, mais il est plutôt d?usage de le boire dans l?année où il est produit. « On peut faire vieillir ceux qui ont un peu plus d?acidité et d?amertume, sans quoi ils deviendraient plats », préciseAdrienne Saulnier-Blache. Certaines variétés de riz s?y prêtent davantage, comme le tamasakae, cultivé dans la préfecture de Shiga, près de Kyoto. Il faut aussi que le saké soit brassé selon la méthode traditionnelle yamahai ou kimoto, c?est-à-dire sans ajout de levures ni de ferments lactiques.

Les sakés à maturation longue, dits koshu, ont reposé au moins trois ans en cuve ou en bouteille. Ces nectars voient alors leur robe quitter leur traditionnelle couleur blanche pour aller vers le jaune paille, puis l?ambré. Ils sont très peu courants au Japon mais progressent sous l?influence de la culture du vin. Quelques cuvées vieilles de trois à huit ans sont déjà disponibles en France. Il faudra attendre 2022 pour déguster des sakés encore plus anciens avec l?arrivée de la marque Inicié, de la maison Shimazaki Shuzô. Et notamment ses deux millésimes-phares, 2003 et 1991, aux incroyables notes de miel, de pain toasté et de fruits secs.

Seule une petite partie de la production japonaise de saké est disponible en France. Mais la plupart des cavistes de l?Hexagone proposent désormais une ou plusieurs références, et le phénomène ne cesse de croître. Certains flacons peuvent également se trouver sur Internet. Pourquoi dit-on que le saké est un vin de riz ?
La confusion a perduré de nombreuses années : non, le saké n?est pas cet alcool distillé à base de sorgho que l?on sert en fin de repas dans certaines cantines chinoises bon marché. Et c?est justement pour réparer ce malentendu que l?expression « vin de riz » s?est imposée auprès des ambassadeurs du saké en France ? sommeliers, distributeurs, cavistes, etc. De quoi parle-t-on alors ? D?une boisson ancestrale japonaise à la robe limpide, obtenue après une lente fermentation. Les Japonais la nomment nihonshu, « saké » étant le terme générique pour désigner un verre d?alcool.
A bien des égards, elle se rapproche du vin : un degré d?alcool modéré (entre 14 0 et 17 0 en moyenne), une large possibilité d?accords et une dimension historico-culturelle forte. Mais la comparaison s?arrête là, car le saké japonais s?éloigne de son cousin en termes d?arômes, de structure, de texture? et de prix aussi : il est difficile de trouver en France une bonne bouteille de saké japonais en deçà de 30 euros ? car l?importer coûte cher.
Comment le fabrique-t-on ?
Même si trois ingrédients suffisent ? riz, eau et kôji, un ferment?, l?affaire est assez complexe. A l?instar des cépages dans le vin, il existe au Japon une multitude de variétés de riz à saké, plus long et plus charnu que le riz de table. Les grains sont plus ou moins polis, c?est-à-dire qu?on leur retire leur péricarde. Après lavage, le riz est trempé, égoutté, puis cuit à l?étuvée dans de grands cuiseurs à plus de 100 degrés, et refroidi aussitôt. Une partie du riz cuit est ensemencée par le kôji (des spores de champignon permettant la transformation de l?amidon en sucre), pendant trois jours, dans une pièce spéciale (kôji-muro). L?autre partie est mise de côté pour alimenter les cuves ultérieurement.
Un pied de cuve (shubo) est réalisé à partir du riz ensemencé (kôji-mai), du riz cuit (kakemai), d?une eau de source la plus pure possible (les Japonais distinguent les eaux douces et dures, selon leur concentration en minéraux) et de levures. Une douzaine de jours sont nécessaires à sa maturation, plus si l?on n?ajoute ni levures ni ferments lactiques. Il est ensuite transposé en cuve avec ajout graduel de matière supplémentaire (eau, riz, kôji) et bâtonnage pour homogénéiser la fermentation, laquelle se prolonge trois à huit semaines. Viennent enfin le pressurage, la filtration, la pasteurisation (ou non) et, parfois, un vieillissement en cuve de quelques mois avant la mise en bouteille.
Comment s?y retrouver parmi toutes les catégories ?
On peut se sentir fort dépourvu face à l?étiquette, surtout si les informations ne sont pas traduites sur une contre-étiquette, ce qui est fréquent. Sont généralement mentionnés la marque, le nom de la brasserie et sa région, la variété de riz utilisée, mais aussi le style : nigori (trouble), kôshu (vieilli), muroka (non filtré), nama (non pasteurisé), genshu (non réduit) ou encore yamahai et kimoto (levures naturelles uniquement). Mais les deux éléments essentiels, qui vont avoir une influence forte sur le goût, sont autres : le taux de polissage résiduel du riz (seimaibuai), exprimé en pourcentage de matière restante,et l?ajout ou non d?alcool.
On trouve ainsi le honjôzô (à partir de 70 % de riz restant), le ginjô (à partir de 60 %) et le daiginjô (à partir de 50 %). Ces trois-là autorisent l?ajout d?alcool distillé avant la filtration. Lorsque ce n?est pas le cas, on parle de junmai. L?appellation s?emploie aussi tel un préfixe pour distinguer les junmai ginjô (saké sans ajout d?alcool avec un taux de polissage à partir de 60 %) et junmai daiginjô (à partir de 50 %).
Ce junmai daiginjô est considéré comme le nec plus ultra des sakés tels qu?on les conçoit depuis les années 1990. Avec cette idée que plus le riz est poli, meilleur est le saké. Mais cette approche ne semble plus faire l?unanimité, un faible polissage pouvant donner d?excellents breuvages. « Certaines maisons commencent à s?affranchir de ces appellations afin de faire exister leur identité de manière autonome plutôt qu?au travers d?une classification née des concours et des bureaux de taxes », constatent les importateurs Adrienne Saulnier-Blache et Barnabé Nuytten, de la société Madame Saké. C?est le cas notamment de la maison Takeno, qui ne mentionne pas le taux de polissage sur ses bouteilles.
Bref, les débats d?experts étant aussi copieux que dans le vin, le mieux est de goûter.
Faut-il le boire chaud, froid, à température ambiante ?
Une des grandes particularités du saké est qu?il peut être bu à des températures très différentes, note Adrienne Saulnier-Blache. L?intérêt ? Elargir la palette aromatique à partir de la même bouteille. « De manière assez empirique, on peut dire que le saké chaud est destiné à accompagner les mets d?hiver, le saké froid ceux d?été », précise la spécialiste. Quand il n?est pas consommé frais (de 5 0C à 10 0C), tel un vin blanc, le saké peut s?apprécier à température ambiante (20 0C) tel un rouge, ou tiède à chaud (de 30 0C jusqu?à 55 0C). Pour le faire chauffer, il ne faut pas utiliser de micro-ondes : c?est dans une casserole au bain-marie que cela se passe, en ayant pris soin de transvaser le nectar dans une petite carafe en porcelaine (tokkuri).
Mais attention, tous les sakés ne se réchauffent pas. Ce traitement est surtout possible pour les « sakés traditionnels », les junmai et honjôzô, qui affichent un profil céréale, lactique ou fermentaire. A distinguer des « sakés modernes », aux notes florales et fruitées, que l?on conserve au réfrigérateur avant de les consommer. Cette distinction entre le « chaud » et le « froid » rejoint donc celle entre « sakés traditionnels » et « sakés modernes » que les cavistes privilégient dans leur classement, visant à coller au profil aromatique recherché par le tôji (maître brasseur).
Dans quel verre le boit-on ?
Depuis l?apparition des sakés modernes, à boire froids, dans les années 1990, les verres à vin type bordeaux ou bourgogne (à base large) sont particulièrement appréciés, y compris au Japon. Ils permettent d?appréhender au mieux la robe, le nez et la complexité aromatique de ces nectars au profil floral ou fruité. Les grands noms de la verrerie à vin ont désormais leur propre modèle adapté, à l?image du Synergie saké en tulipe, de la marque Lehmann.
En revanche, les sakés chauds se dégustent dans de petits récipients traditionnels en céramique, porcelaine, bois ou métal. On distingue notamment les o-choko, petites coupes de 2 à 4 centimètres au buvant droit, des sakazukis, plus larges et évasés. Les premiers sont plutôt adaptés aux sakés ayant un profil céréale, les seconds à ceux qui privilégient la minéralité. Sans être idéaux, de petits verres à alcool fort feront aussi l?affaire?
Peut-on accorder le saké avec autre chose que des poissons crus ?
La cuisine japonaise, notamment les sushis et sashimis, est certes idéale pour apprécier au mieux les arômes du saké. On pense aussi aux fruits de mer, notamment aux huîtres. Mais de nombreux sakés se marient très bien aux poissons cuits, fumés, ainsi qu?aux assiettes végétales ou aux champignons.
Selon le style de saké et la température de service, on peut aussi imaginer des alliances avec des viandes blanches, rôties ou en sauce, de la charcuterie, des fromages à pâte persillée ou pressée cuite, ainsi que des desserts. De manière générale, les possibilités d?accords sont plus nombreuses qu?avec le vin. Là où ce dernier échoue à s?accorder convenablement, le saké excelle. Le meilleur exemple étant l??uf, dont il est le compagnon idéal.
Est-ce que le saké se bonifie avec l?âge, comme le bon vin ?
Certains sakés peuvent gagner en qualité, les années passant, mais il est plutôt d?usage de le boire dans l?année où il est produit. « On peut faire vieillir ceux qui ont un peu plus d?acidité et d?amertume, sans quoi ils deviendraient plats », préciseAdrienne Saulnier-Blache. Certaines variétés de riz s?y prêtent davantage, comme le tamasakae, cultivé dans la préfecture de Shiga, près de Kyoto. Il faut aussi que le saké soit brassé selon la méthode traditionnelle yamahai ou kimoto, c?est-à-dire sans ajout de levures ni de ferments lactiques.

Les sakés à maturation longue, dits koshu, ont reposé au moins trois ans en cuve ou en bouteille. Ces nectars voient alors leur robe quitter leur traditionnelle couleur blanche pour aller vers le jaune paille, puis l?ambré. Ils sont très peu courants au Japon mais progressent sous l?influence de la culture du vin. Quelques cuvées vieilles de trois à huit ans sont déjà disponibles en France. Il faudra attendre 2022 pour déguster des sakés encore plus anciens avec l?arrivée de la marque Inicié, de la maison Shimazaki Shuzô. Et notamment ses deux millésimes-phares, 2003 et 1991, aux incroyables notes de miel, de pain toasté et de fruits secs.

Not long after Tesla bought Bitcoin, Elon Musk made it a habit to tweet frequently about Dogecoin (DOGE), which often resulted in extreme price increases.
Memecoins attracted a lot of attention, especially in the Reddit community. The DOGE rally resulted in other dog-related Memecoins also seeing dramatic price increases.
For a short time, the self-proclaimed Dogecoin killer Shiba Inu (SHIB) was even able to overtake the OG-Memecoin DOGE and made it into the top 10 largest crypto currencies by market capitalization. However, Arcane Research believes that most memecoins will fade into insignificance in 2021 and become a historical relic of 2021.
“Bitcoin will outperform the S&P 500”
For the third year in a row, Bitcoin has outperformed both gold and the S&P 500. Bitcoin is up over 70 percent this year. The S&P 500, on the other hand, has just risen by around 30 percent, while gold even suffered a price decline of around 7 percent.
The report from the Norwegian crypto analyst assumes that if the stock market continues to rise in the coming year, Bitcoin will again outperform the S&P 500. However, should we see a red year for the stock market, Arcane Research believes that Bitcoin will fall even more.
ETFs will grow strongly in 2022
2021 was a big year for Bitcoin-related investment products. The rapid growth has led financial regulators around the world to finally approve spot-based ETPs in other countries in addition to the approval of futures-based ETFs in the US.
This has led to more and more BTC flowing into ETFs. There are now almost 850,000 Bitcoin in ETF products.
Arcane Research thinks it likely that this trend will continue and that there will be over a million BTC in ETFs by the end of 2022.
XRP and Cardano will fly out of the top 10
Based on the growth of the Binance Smart Chain (BSC) and the growing market capitalization of many Layer 1 smart contract platforms such as Solana (SOL), Terra (LUNA) and Avalanche (AVAX) in 2021, the analysts at Arcane Research predict that Ripple (XRP ) and Cardano (ADA) will leave the top 10 largest cryptocurrencies by market capitalization in the coming months.

Excursion to Salzderhelden near Einbeck
Salzderhelden is a small nest in southern Lower Saxony, not far from Göttingen. The region is called Leinebergland. Salzderhelden has not been an independent municipality since 1974. At that time the spot became a district of Einbeck. (The district town four kilometers away now has 46 of them. My father was born in one of them.) Currently, a good 1700 people live in Salzderhelden.
We didn’t experience the place itself as particularly spectacular or overly pretty. But it has history!
Martin and I drove by here countless times on the way to Thuringia to see his parents. Every time the white place name as an oversized limestone puzzle has fascinated me. But somehow I never googled.
Our city trip to Einbeck as part of our #cities4family-Cooperation finally gives us the opportunity to explore Salzderhelden. We are traveling as a family of four with toddlers (2) and teenagers (17).

Highlight: By train to Salzderhelden
From Einbeck we take the Ihme-Bahn to Salzderhelden. The short train ride is a real highlight for our toddler. The trip in one direction takes just six minutes. There is still a stop in nowhere. Then we drive into the small train station in Salzderhelden.
In Salzderhelden, it’s the end of the field – although that actually applies to Einbeck. In terms of its tracks, Salzderhelden is Einbeck’s gateway to the world.
There is a small terrace directly in the extension of the Sack Track. It belongs to the ?zur Molli? café, which sees itself as a ?solidarity-based hands-on kiosk?. He is purely voluntary, with a lot of love and according to the principle “pay what you want?Operated. Unfortunately, during the week (except on Mondays) it only opens in the mornings when commuters are out and about. On Sundays from 1 p.m. to 4 p.m. there is a track concert with home-baked cakes. (Unfortunately we just miss that.)
The station café is idyllically located in the Jungwald, so to speak.
The station piano is always accessible. Everyone can play here.

Walk through the Leinepolder
The Leine flows between the train station and the old village center. We could just cross it quickly over the car bridge. Or we take the little longer detour via the Leinepolder barrage. So we immediately get an impression of the region’s greatest ecological treasure.
The round tower at the back is the control unit. The castle ruins shimmer in the background.
Around 30 dams stretch around the river from Northeim to Salzderhelden. They form five polders, i.e. areas that can be flooded if necessary. A work on the closure controls the water masses in the area. The construction of a large retention basin began as early as 1972. The complex facility was completed in 1994.
The building is admittedly not that pretty.
What was planned as flood protection in a technology-oriented time has since developed into an important component of nature conservation. Although at first glance there was massive interference with nature, important retreats for native waterbirds and migratory birds have emerged on the other side. Storks, kingfishers, herons and cormorants, for example, have settled in the Leinepoldern or regularly stop here.
Even if you don’t see much of it in my photo quality: Every dark point is actually a bird.
Coming from the train station we walk straight to an information board. Here we also find a QR code for the new listening stations. The online audio guide provides audio plays a few minutes long with background information on the nature and history of the place.
Quite informative.
Because the weather is pretty bad today, we forego the hike through the nature reserve that we were actually toying with. Instead we leave it with a short walk over the weir into the town. While listening to the audio guide, we can see different species of birds. That’s enough for a small impression. If you want to delve deeper into the subject, you can refer to the Leinepolder Website inform. (I could very well imagine a bike tour here, for example.)
That would be the way into the middle of nature.
The ruins of the Heldenburg
The biggest attraction of Salzderhelden is the castle ruins. The old Heldenburg towers over the historic town center. From here the view goes far over the Leinebergland (if the weather is better than when we visited).
The coat of arms, which later became the ?Lower Saxony horse?, was probably used for the first time at the castle.
The climb is steep but short. We approach the ruin through the moat. On this path we also learn a lot about the history of the building. Information boards are waiting for us at regular intervals so that we can organize our way well.
It is a few hundred meters from the main road up to the castle.
As we learn, the Heldenburg served as the residence of the Guelph Principality of Grubenhagen from 1291 to 1596. Above all, it was supposed to secure the salt spring that was at the foot of the hill.
Unfortunately, this explains the place name in a rather unromantic way. No heroes were at work here. There were heaps on the edge of the salt production, the tonal discolored in the course of time and changed to a nobler word.

You can just as easily visit it on your own. So we do it. The tour with the professional is sure to be enlightening and interesting. With a small child (and experience has shown that teenagers are only moderately motivating), we are more flexible.
So we can take as much or as little time as we want. All in all, as hard-working info board readers, we need about three quarters of an hour.
There is not so much to see in the ruins of the Heldenburg. The remains of the castle chapel have been preserved. They are occasionally used as an outside church, so they have seats and are not freely accessible. Two towers and two beer cellars are also clearly visible. The outer wall of the hall is particularly striking. A chimney and a toilet can still be guessed there.

There are also several information boards in the courtyard. Several nice seating areas, some with tables, offer good opportunities for a picnic.

Those who are less well prepared can stop off at the Burgschänke at the foot of the castle. There is also a parking lot here.
The Salzderhelden salt works
Unfortunately, we don’t make it to the eponymous nucleus of the place. The salt works can look back on a long and eventful history. The brine spring, which was simply skimmed off, developed into brisk salt production as early as the Middle Ages. New techniques were used as early as the early modern era to increase yields and ensure profitability. From water art to steam engines to the electrification of pumps, the company ran until 1960.
After that, a cultural promotion group had the industrial monument returned to the state it was in around 1930. The historic site served as a museum – until it was completely destroyed by arson in July 2020. At the moment the association is collecting donations for reconstruction. The fly in the ointment
At this point I would like to mention that we had a very unpleasant experience on the way back. Sure, there are unpleasant people everywhere. But it’s difficult to avoid them in the small ?Hhmebahn?. One of our few passengers (without hair, in combat boots) shows very aggressive behavior. He’s not wearing a mask. As soon as the train starts moving, it begins to rattle and cough. He looks challengingly around the group. It is clear from the outset that friendly requests will not help here.
A train attendant is not in sight. I solve the situation for myself by simply sitting in the empty first class with the toddler. (Franka wears a mask in public transport and similar situations, but only knotted fabric masks fit her halfway. And her motivation for doing this is always great at the beginning, but never lasts long.) The rest of the family trusts FFP2. (And ultimately neither corona nor tuberculosis or smoker’s cough – whatever said bag may have coughed up on the train.)
If everyone is wearing a mask, rail travel works wonderfully.
It’s a shame that Salzderhelden said goodbye to us so stupidly. Because overall our little trip was so nice!

Excursion to Salzderhelden near Einbeck
Salzderhelden is a small nest in southern Lower Saxony, not far from Göttingen. The region is called Leinebergland. Salzderhelden has not been an independent municipality since 1974. At that time the spot became a district of Einbeck. (The district town four kilometers away now has 46 of them. My father was born in one of them.) Currently, a good 1700 people live in Salzderhelden.
We didn’t experience the place itself as particularly spectacular or overly pretty. But it has history!
Martin and I drove by here countless times on the way to Thuringia to see his parents. Every time the white place name as an oversized limestone puzzle has fascinated me. But somehow I never googled.
Our city trip to Einbeck as part of our #cities4family-Cooperation finally gives us the opportunity to explore Salzderhelden. We are traveling as a family of four with toddlers (2) and teenagers (17).

Highlight: By train to Salzderhelden
From Einbeck we take the Ihme-Bahn to Salzderhelden. The short train ride is a real highlight for our toddler. The trip in one direction takes just six minutes. There is still a stop in nowhere. Then we drive into the small train station in Salzderhelden.
In Salzderhelden, it’s the end of the field – although that actually applies to Einbeck. In terms of its tracks, Salzderhelden is Einbeck’s gateway to the world.
There is a small terrace directly in the extension of the Sack Track. It belongs to the ?zur Molli? café, which sees itself as a ?solidarity-based hands-on kiosk?. He is purely voluntary, with a lot of love and according to the principle “pay what you want?Operated. Unfortunately, during the week (except on Mondays) it only opens in the mornings when commuters are out and about. On Sundays from 1 p.m. to 4 p.m. there is a track concert with home-baked cakes. (Unfortunately we just miss that.)
The station café is idyllically located in the Jungwald, so to speak.
The station piano is always accessible. Everyone can play here.

Walk through the Leinepolder
The Leine flows between the train station and the old village center. We could just cross it quickly over the car bridge. Or we take the little longer detour via the Leinepolder barrage. So we immediately get an impression of the region’s greatest ecological treasure.

En la vida real, Emilia Clarke (la actriz que la interpreta) también se ha tenido que enfrentar a dos batallas que casi le cuestan la vida. Según contó en un ensayo publicado por la revista New Yorker -?titulado A battle for my life (una batalla por mi vida)? se trató de dos aneurismas que se tuvo que atender de emergencia.
Al terminar de rodar la primera temporada, en 2011, Emilia estaba en el gym cuando su vida cambió en un segundo: ?La mañana del 11 de febrero me estaba vistiendo? cuando empecé a sentir que se avecinaba un fuerte dolor de cabeza. Me sentía tan agotada que a penas me podía poner los tenis. Cuando empecé el entrenamiento, tuve que obligarme a completar los primeros ejercicios?, narró la actriz.
Al momento de hacer una serie de planchas, empezó a sentir como si una banda elástica apretara su cerebro. Y aunque la actriz trató de ignorarlo, no pudo y tuvo que parar. Entonces casi a rastras se dirigió al baño donde después de vomitar el dolor empeoró. ?En un momento supe lo que estaba pasando: mi cerebro estaba dañado?.
Una mujer que estaba en el baño de al lado le preguntó si estaba bien y luego de auxiliarla llamó a la ambulancia. ?Entonces todo se volvió borroso. Recuerdo el sonido de una ambulancia; escuché voces, alguien que decía que mi pulso era débil?.
Al llegar al hospital, nadie sabía qué le pasaba y fue hasta que le hicieron una resonancia magnética que descubrieron cuál era su padecimiento: ?Tuve un aneurisma, una ruptura arterial. Más tarde me enteré que aproximadamente un tercio de los pacientes con eso mueren de inmediato o poco después. Los sobrevivientes necesitan de un tratamiento de urgencia para sellar el aneurisma, pues existe un alto riesgo de una segunda hemorragia que generalmente es fatal?.
Si quería vivir y evitar secuelas irreversibles, sólo había una salida: operarse de inmediato, y aún así, nadie le garantizaba que quedara bien.
?Recuerdo que me dijeron que debía firmar un consentimiento por la operación. ¿Una cirugía de cerebro? Estaba a la mitad de mi muy ocupada vida, no tenía tiempo para una cirugía de cerebro?. Finalmente Emilia, de entonces 24 años, firmó y entró al quirófano.
Al salir de la cirugía (que duró tres horas), Emilia recuerda que no sabía dónde estaba y su campo de visión era restringido. Cuatro días después, una enfermera le preguntó su nombre (Emilia Isobel Euphemia Rose Clarke), y ella no pudo recordarlo, lo que la puso en un estado de pánico.
“Jamás había experimentado un miedo como ese. Podía ver mi vida hacia adelante y así no valía vivirla. Soy actriz , necesito recordar mis líneas y ahora no podía acordarme ni de mi nombre?. Dos años después, en 2013, hizo una obra de teatro en Broadway. Aprovechando su seguro médico, fue a hacerse un escaneo cerebral (algo que para entonces ya se practicaba con regularidad) y así fue como descubrió que ese otro aneurisma había doblado su tamaño.
Al poco tiempo volvió al quirófano? y la operación falló. Tuvo una hemorragia masiva. ?Los médicos me dijeron que mis oportunidades de sobrevivir eran muy pocas a menos que me volvieran a operar ya, de inmediato?. A diferencia de su primera cirugía, que fue no invasiva, esta segunda fue a la antigua, es decir, tenían que abrirle el cráneo. La recuperación fue mas dolorosa y lenta, pues además, un pedazo de cráneo fue reemplazado por una placa de titanio.
